1 Lb. Eggplant, peeled and diced
3 Med. Onion chopped
1 Egg, beaten
2 tsp. Salt
¼ tsp. Pepper
2 Tbsp Soft Butter
1 Cup Sour Cream
1 Cup Grated Cheese
1 Cup Ritz Crackers

Directions:
Directions:
Combine eggplant and onion in saucepan. Add water to 1 inch over eggplant. Bring to a boil and simmer till tender. Drain, combine with egg in a large bowl. Add salt, pepper and butter. Mix well. Mix sour cream and cheese in small bowl. Spoon half the eggplant mixture into baking dish. Add ½ the cheese mixture. Repeat layers. Top with cracker crumbs.
