1 tomato
2 cups eggs
Salt & pepper to taste

Preheat oven to 350 degrees. Lightly grease a muffin tin, then equally divide the spinach, tomato and eggs across 6 cups. Season with salt & pepper. Bake 15 minutes or until the whites have set and serve hot.
