"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 whole deer ham
10 or 12 potatoes, peeled and cubed (not to small)
4 or 5 carrots, diced
2 medium onions, sliced
5 or 6 mushrooms, cleaned and sliced (may omit if you're not too crazy about them)
2 cups of beef broth or chicken broth (whatever you have on hand)
3 celery stalks, diced small
1 packet gravy mix
1 tsp cinnamon
1 tbsp salt/pepper
1 tsp garlic powder

Directions:
Directions:
Place deer ham in large aluminum pan, season with salt and pepper and garlic powder. Add potatoes, onions, and carrots. Carefully placing around the deer ham. Add enough beef broth or chicken broth to just cover deer ham. Place mushrooms and celery on top of deer ham and veggies, salt and pepper and cinnamon and gravy mix should be mixed in small bowl and sprinkled over entire pan. Cover with aluminum foil and bake at 350º for about 4 or 5 hours (depending on oven).

This meal also works great on a grill, baking time will be slightly longer..... approx. 6-7 hours. **But please cook slowly, checking every hour or so for moisture content.... extra broth or water may have to be added to keep meat from becoming too dry.**

For smaller hams, can be placed in slow cooker! (put it on in the morning and come back home for an awesome meal)

Personal Notes:
Remember, deer meat is a very lean meat and should be cooked slowly and covered to keep moist!

Enjoy~
