Ingredients:

• 8 oz. Fresh Spinach
• 3 Boiled Eggs
• 4-6 slices of crispy bacon
• 4 mushrooms sliced
• Red onion thinly sliced (optional)

Dressing ingredients

• ½ cup olive oil
• Ό cup balsamic vinegar
• Juice of Ό fresh lemon
• Ύ t soy sauce
• 1 ½ t sugar
• Ό t paprika
• 1 large garlic clove smashed and finely chopped
• ½ t celery seed
• ½ t dry mustard

• Fresh Parmigiano-Reggiano to grate on top (optional)

• Boil and peel the eggs
• Fry and drain the bacon
• Wash and slice the mushrooms
• Peel and slice the red onions

Prepare the dressing

• In a small sauce pan, combine all dressing ingredients
• Heat to a boil and immediately remove from heat
• Whisk until well combined

• Put the spinach leaves in a salad bowl
• Crumble the bacon and add to the spinach
• Add the mushrooms
• Drizzle 2/3 of the warm dressing over the spinach
• Toss to coat the leaves with the dressing
• Try a leaf. If more dressing is needed add it and toss again

• You can either slice the eggs and onion on top of the spinach in the salad bowl, or put the spinach salad on individual salad plates and arrange sliced eggs and onions on top

• Serve with the cheese for grating if desired.

You can make the dressing in advance and rewarm it before preparing the salad.

You can sautι the mushrooms if you prefer them cooked. The same goes for the onions if you are using them. I don’t like onion in my salad, so they are optional.
