"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
• 1 ¼ sour cream
• 2 teaspoons Worcestershire sauce
• ½ t fresh ground black pepper
• ⅓ t garlic powder
• ½ t dry mustard

• 1 cup real mayonnaise
• 4-6 ounces good quality blue cheese

Directions:
Directions:
• Put the first five items in a mixing bowl and mix on low for 2 minutes.

• Add the mayonnaise and mix 1 minute on low, raise speed to medium and mix another 2 minutes.

• Add half of the blue cheese crumbled and mix on low 3 minutes

• Add the rest of the cheese in larger chunks. Mix on low 1 minute. (If you like it more smooth, mix a little longer)

• Add more fresh ground pepper to taste.

• I never add salt, since it is pretty salty already. If you want it saltier, add the salt now.

Personal Notes:
Personal Notes:
This makes a lot. Half is plenty for 4 people+, and keep in mind you can store this for no more than 5-7 days.

Gorgonzola makes a great dressing too.

My friend Jonathan gave me this recipe. I made some minor changes and think it is up there with good restaurant dressing.

You can do your own Iceberg wedge with this and crumbled bacon.
