Directions:
Combine water, yeast, and sugar and let foam.

Heat the butter and milk together.

Blend yeast mixture, milk mixture, and salt, sugar, eggs, and 4 cups of flour in mixer till combined then add 5 more cups of flour. let it knead in the mixer for 10 minutes. (the dough is sticky, roll it out in plenty of flour). Cover and let it rise for an hour.

To roll it you can use any method you like, but you can cut long strips, then squares and then triangles to roll. Once rolls have risen for about an hour (little less is fine) back at 350 for about 14 minutes depending on how you rolled them out.

For cinnamon rolls:
While dough is rising, melt 1 cup butter and then add 2 cups brown sugar and 1/2 cup cinnamon, mix well.

Roll out half the dough into a rectangle and spread the cinnamon mixture as evenly as you can. Cut with dental floss, slide under the roll, wrap around and criss cross gently for a perfect cut. Dough rises nicely, so don't place too close. let rise for 1 hour. Bake at 325 until golden brown (about 18 min).
