1 Cup Yellow Corn Meal
½ Cup Flour
2 tsp. Baking Powder
1 Egg
½ Cup Milk
3 Tbsp. Sugar
½ to 1 Cup chopped Onion
2 Tbsp. Oil

Directions:

Mix all ingredients together and drop by teaspoonfulls into deep fat. Fry to golden brown.

Edna Huffhines, born in 1906 died in 2001, came to Matagorda in the winters to enjoy being with her daughter Mary Stepp, and cook her wonderful hush puppies to go along with all the great fish they caught off their pier in Matagorda.
