1 Cup Corn Meal
Handful of white Flour
3 heaping Tbsp. Baking Powder
¼ tsp. Baking Soda
¼ tsp. Salt
1 tsp. Sugar
1 Egg
additional Corn Meal if needed


Directions:
Directions:
Mix dry ingredients in large bowl, add egg and buttermilk.Add additional cornmeal to achieve cake like batter. DO NOT OVERMIX. Pour immediately into preheated greased black cast iron skillet. Bake 12 to15 minutes until golden crust.

This is an old Linebarger recipe developed in late 1800's in Stanton , Texas. Cora Ellen Watson was born January 2, 1899 and passed away August 10, 1999 in Citrus Heights, Ca. Married James Zeddic Linebarger born April 10, 1885, passed away Sept. 3, 1985. She could make biscuits in a Dutch oven over coals that would raise all the way to the top of the oven. She also said wood fire stoves got hot enough to bake a real cake, modern day stoves just didn't cut it. Grandmother of Sterling Linebarger, Historical Society member and current Matagorda County Resident.
