10 lbs. tomatoes, diced
10 6-oz. Italian paste
5 T. basil
5 T. oregano
10 T. sugar
5 T. salt
5 tsp. pepper
1 1/2 tsp. cayenne pepper
1 1/4 c. Parmesan cheese
1/2 lb. onions, diced
1 green pepper, diced
1 head garlic pressed in 2 T. olive oil

Directions:
Directions:
Saute onions, green pepper, garlic. Add remaining ingredients. Simmer 1 1/2 - 2 hours. Stir often. Should have a few bubbles, but don't burn. May thicken with cornstarch water mix. Pour in jars. Water bath. Pints: 40 minutes. Quarts: 50 minutes. Makes approximately 7 quarts or 14 pints.

*Also makes good pizza sauce if strained to make smooth
