1 T. garlic, chopped
1 T. fresh basil, chopped
2 T. fresh rosemary, chopped
2 T. fresh oregano, chopped
2 T. fresh parsley, chopped
4 T. olive oil
1 1/2 T. kosher salt
1 T. pepper
1 3-bone standing beef rib roast

Directions:
Directions:
In small bowl, combine garlic, herbs, oil, salt and pepper to make paste. Rub the roast with herb mixture, pressing it into the meat and coating surface evenly.

Wrap the roast with a single layer of cheesecloth. Prepare the grill for smoke cooking.

Grill roast over indirect medium heat until a meat thermometer in the center of roast registers 140 degrees for medium rare. Remove the roast from grill. Loosely cover with foil and allow to rest for 15-20 minutes before carving.
