Mesquite Marinade:
1/2 c. water
1 tsp. mesquite-flavored liquid smoke
1/2 tsp. salt
Dash pepper

Spicy BBQ sauce:
1/2 c. BBQ sauce
1/4 tsp. cayenne pepper
Dash chili powder

1 boneless chicken breast
1/3 c. red bell peppers, sliced
1/3 c. Spanish onion, sliced
2 large flour tortillas
1 1/3 c. shredded Monterrey jack cheese

Directions:

Prepare the marinade. Add chicken breast to the bowl; cover and chill for one hour. Then preheat grill to high temperature. Prepare the spicy BBQ sauce. Throw the chicken on the grill and cook. Then chop it into bite-size pieces. Sauté peppers and onions in pan.

Set a large skillet over medium/low heat. Put one flour tortilla in the skillet and sprinkle 1/3 c. cheese over half of tortilla. Spoon half of vegetables over cheese, followed by half of the chicken.

Spoon BBQ sauce over chicken and another 1/3 c. cheese. Fold the other side of the tortilla over the filling and press down. Flip quesadilla until cheese melts. Put on plate and slice into pieces. Repeat for other tortillas.
