2 cups pumpkin puree or use squash or sweet potatos
1 teaspoon cilantro
small amount diced onion, optional
1/2 cup goat cheese
tortillas

optional...chili powder, hot peppers, lime juice

Directions:
Directions:
Mix together pumpkin, cilantro, onion.
Spread on tortilla
Add crumbled cheese on top
Heat until cheese softens and tortilla is crispy

You can also add a little chili powder, hot peppers, and a squeeze of lime
