10 c. shred zucchini (no seeds)
4 chopped onions
2 chopped green peppers
2 chopped red peppers
1/4 c. pickling salt
Mix well. Cover and let stand overnight. Rinse and drain well. Put into pot.
Add 10 c. coarsely chopped tomatoes and 2 cans tomato paste. ( I did 1 heaping ice cream pail full of Roma tomatoes). Set aside.
Mix:
2 c. vinegar
1 c. brown sugar
1 tsp. pickling salt
2 tbsp. dry mustard
10 chopped garlic cloves
1 tsp. black pepper
1 tbsp. cumin
2 tbsp. red pepper flakes
jalepeno peppers (to taste)

Directions:

Mix well, and pour over vegetables. Bring to a boil, and simmer for 1/2 hour. Put in jars, and seal.
