8 oz. bag of frozen corn
2 cans of sliced olives (2.5 oz each)
1 can black beans, rinsed and drained
1 medium red onion chopped
1 red pepper chopped
1 green pepper chopped
2 ripe avocados

Dressing:

2 cloves of garlic (I use a jar of minced garlic.)
1/3 cup olive oil
1/4 cup of lemon juice or lime juice (or split with both)
3 T cider vinegar
1 t. dried oregano
1/2 t. salt
1/2 t. pepper

Directions:
Directions:
Combine veggies and pour dressing over and toss. Refrigerate for several hours or overnight. Add the avocados right before serving. Serve with tortilla chips.
