1 cup cooking oil
3-4 cups diced apples (do not peel)
1 cup chopped pecans
1 teaspoon vanilla extract
2 cups sugar,
3 eggs
1 teaspoon cinnamon
3 cups flour
1 teaspoon baking soda

Directions:
Directions:
1. Preheat oven to 300 º F. (this temperature is correct.)
2. Mix oil, sugar and vanilla.
3. Add eggs and mix well.
4. Add flour, soda, nuts and cinnamon.
5, Pour into a greased and floured Bundt or tube pan and bake for 90 minutes.
6. Allow cake to cool on wire rack for 15 minutes, and then invert onto a plate.
7. While cake is still hot, sprinkle with confectioner's sugar and wrap in foil to keep it moist.
