2 egg whites
⅔ cup sugar
1 teaspoon vanilla extract
1 cup chopped pecans
1 cup mini-chocolate chips*

*1 cup crushed chocolate toffee bars (about 4 candy bars) or 1 cu butterscotch chips may be substituted for the chocolate chips

Directions:

1. Preheat oven to 350º F.
2. Beat egg white until stiff.
3. Gradually add sugar and beat until stiff.
4. Add vanilla, pecans and chocolate chips (or substitution), and stir genty.
5. drop by teaspoons onto foil-covered cookie sheets.
6. Place in oven and then turn oven off.
7. Do not open oven door and leave cookies in oven at least 6 hours or overnight.
