2 cups flour
2 teaspoons baking powder
2 teaspoon baking soda
1 teaspoon salt
2 teaspoon cinnamon
2 cups sugar
4 eggs
1½ cups oil
3 cups grated carrots
1 cup black walnuts

Directions:
Directions:
1. Preheat oven to 325º F.
2. Mix carrots, sugar, eggs and oil together in large bowl.
3. Add dry ingredients to mixture and stir until well blended.
4. Stir in nuts.
5. Pour into greased baking pan. ( I use a glass 13-in x 9-in baking pan)
6. Bake for 55 minutes.
7. Cool on wire rack.

I frost this cake with the following recipe:

CREAM CHEESE FROSTING
Combine:
8-oz. pkg. of cream cheese (at room temperature)
3 cups powdered sugar
2 teaspoons vanilla

My first professional nurses job was in the Recovery Room at St. Joseph's Hospital. Miss Florence Perry was my boss and she gave me this delicious recipe. She made me promise to always use black walnuts and to frost the cake with the cream cheese frosting recipe she gave me!!
