4 cups coconut
1 14 ounce can sweetened condensed milk
1/2 teaspoon almond extract
1 3 ounce pkg pineapple or strawberry jello

Preheat 350

Mix all ingredients and refrigerate at least 2 hours. Roll into one inch balls and place on greased baking sheet I prefer parchment paper and bake 8 to 10 minutes until lightly brown edges. Remove from oven and let cool a couple of minutes and place on cooling racks.

This is one of Hunters favorite cookies along with chocolate chip. That I will never forget to include with his Christmas cookies. Whole tray of cookies and he walked away because there was no chocolate chip cookies
