24 oz. cream cheese
3 eggs
3/4 cups sugar
1 1/2 Tbsp. lemon juice
1 1/2 tsp. vanilla
36 vanilla wafers
1 can pie filling (cherry, blueberry or strawberry)
Directions:
Directions:
Combine cream cheese, sugar, eggs, lemon juice and vanilla. Beat until smooth. Line cupcake pans with foil cupcake liners. Place a vanilla wafer in each cupcake liner. Fill 2/3 full of cream cheese mixture. Bake at 350º for 15 to 20 minutes. Cool. Top with pie filling. Makes 3 dozen.
