3 cups unsifted flour
2 tsp. baking powder
2 tsp. soda
1/2 tsp. salt
1 tsp. cinnamon
2 cups sugar
4 eggs
1 1/4 cups corn oil
2 tsp. vanilla
3 cups grated carrots
1/2 cup nuts, chopped
1/2 cup raisins

Directions:
Directions:
In mixing bowl, place flour, baking powder, soda, salt, cinnamon and sugar. Stir until thoroughly mixed. Make a well in the center and add the eggs, oil and vanilla; beat until smooth. Add grated carrots, nuts and raisins. Turn into greased 10 inch angel food cake pan. Bake in 350º for 1 hour and 15 minutes. Cool.

4 oz. cream cheese
2 cups unsifted powdered sugar
1 tsp. vanilla

Beat together and frost cake.
