1/2 cup butter (or margarine)
2 cups sugar
2 eggs, beaten
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. salt
2 tsp. baking soda
2 cups sifted flour
2 tsp vanilla
6 cups peeled, diced apples
1/2 cup chopped nuts

Directions:

Cream shortening and sugar; add eggs and mix well. Sift dry ingredients together. Add to creamed mixture. Stir in apples, nuts and vanilla. Pour into greased 13x9 inch baking dish. Bake at 350º for 30 to 35 minutes, or until done. Check with toothpick. May be served with whipped cream.

Joyce Whitmore doesn't peel the apples. This is a great cake - especially good for fall.
