1 cup biscuit mix
1/4 cup softened butter
3 Tbsp. boiling water

Directions:
Directions:
Place butter and biscuit mix in a 9 inch pie plate. Pour in water; stir mixture with fork until dough forms a soft ball and leaves sides of the plate. Pat dough evenly over edge. Prick all over with a fork. Bake 10 to 12 minutes in a 425º oven (450º for metal pie pan) until golden. Remove from oven and cool.
 

Filling

6 cups fresh strawberries
1/2 cup water
1 cup sugar
2 1/2 Tbsp. cornstarch
1 Tbsp. butter
Red food coloring
1 cup heavy cream (or whipped topping)

Directions:
Directions:
Prepare strawberries, reserving a few for garnish. Mix water, sugar and cornstarch in saucepan. Crush 2 cups strawberries and add. Bring mixture to a boil; cook 3 to 5 minutes until clear. Add butter and enough red food coloring to give glaze a bright color. (If seeds bother you, press through strainer.) Arrange remaining whole strawberries in the pie shell, mounding them in the center. Spoon glaze over top, making sure all berries are covered; cool.

Whip heavy cream and sweeten to taste. Arrange fluffs around the edge of pie. Garnish with reserved whole strawberries. Yield: 8 generous servings.
