1 cup sugar
1/4 cup flour
1/8 tsp. salt
1/4 cup butter, melted
2 eggs, separated
1/4 cup lemon juice
Grated peel of 2 lemons
1 cup milk
1 Tbsp. sugar

Directions:
Directions:
Combine sugar, flour and salt. Add melted butter and egg yolks. Beat until smooth.

Beat in lemon juice and grated lemon rind. Add milk, beating slowly. Beat egg whites stiff, but not dry. Slowly add 1 tablespoon sugar. Fold carefully into other ingredients until all whites are thoroughly dissolved.

Bake in pie shell at 450º for about 10 minutes. Then bake 350º for 25 additional minutes. The top will be like a sponge cake and the bottom like a custard. Elegant!
