1 Tbsp. cornstarch
1 1/2 Tbsp. cold water
1/2 cup boiling water
3 egg whites
3 to 6 Tbsp. sugar
1 tsp. vanilla (or other flavoring)

Directions:
Directions:
Dissolve cornstarch in cold water. Add boiling water and cook until clear. Cool to room temperature. Beat egg whites until they stand in peaks. Continue beating, add cornstarch mixture; then slowly form firm peaks. Pile meringue on the pie. Be sure to seal edges of crust with meringue, so it won't shrink. Bake at 375º for about 8 minutes, until nicely browned. This makes a tender meringue that doesn't weep and holds up well the next day.
