Ingredients: 1 pound Italian sausage, bulk or remove skin from links 1 medium onion, chopped 1 clove garlic, chopped 1/3 cup fresh parsley (or 1 T. dried) 2/3 cup chicken bouillon/broth/stock 1 - 10 ounce package sweet green peas 1 - 8 ounce can of chopped tomatoes (1 cup) or fresh 2 teaspoons basil 8 oz. pasta 1/2 cup Parmesan cheese

Directions:Cook sausage in a skillet until well browned. Drain off most of the fat (leave in approx. 2 T) to saute the onion. Saute until onion is tender. Add garlic and parsley. Add chicken broth, peas, tomatoes and basil. Cover and simmer 5 minutes until peas are warm and tender.
Meanwhile, cook pasta. Drain and toss with the cheese. Top with the sauce. Makes 4 servings |

Notes: This recipe came from Uncle Dick. I tried duplicating it for years, then finally got smart enough to ask for the recipe. You can adjust most anything according to taste. I use mild sausage, but hot would be awesome too. The original recipe calls for draining off all the sausage fat, then adding oil. I leave a couple spoons of sausage fat in pan instead for the extra flavor. I use a 14 ounce can, but only put in half the tomatoes and all the juice.
