cook and peel fresh beets and slice(canned and drained beets work also)

1/2 cup vinegar
1/2 cup sugar
2 tbls butter
1 tbls cornstarch
Pinch of salt

Mix in small saucepan, stir and bring to a boil stirring until slightly thickened

Pour over sliced beets and serve

This recipe can be adjusted according to the amount of beets
