Ingredients:  
3 cups shredded zucchini
1 medium carrot, (sliced about 1/2 cup)
1 small onion, chopped
2 TBSP parsley , snipped
1 cup biscuit mix
3/4 cup cheddar cheese or 3/4 cup american cheese, shredded
1/4 cup oil
3 eggs, slightly beaten
1/2 tsp salt
1/2 tsp oregano
1/4 tsp pepper
1/8 tsp garlic powder

Directions:
Directions:
Combine all ingredients and pour into greased casserole or baking dish. Bake 350º for 30-35 minutes or until golden brown. Can also be used as a vegetable side dish for chicken or meatloaf.
