6 zucchini sliced
2 eggs beaten
1 cup mayonnaise
24 buttery round crackers, crushed
2 TBSP butter, diced
1 small onion, diced
1 cup grated Romano cheese
1/4 tsp pepper

Directions:
Directions:
Preheat oven at 350º Spray 9x13 pan with cooking spray. Put zucchini in large saucepan, cover with water, bring to a boil and boil until barely tender(about 2 minutes) drain. Whisk together eggs and mayo until smooth, stir in onions, cheese and pepper. Fold in squash, then pour mixture into pan. Sprinkle with crushed crackers. Dot evenly with diced butter. Bake 30-40 minutes until middle casserole is no longer moist, and springs back evenly when gently pressed
