1 head cauliflower cut into florets
1 TBSP olive Oil
1 clove garlic , smashed
1/4 cup grated parmesan cheese
1 TBSP cream cheese
1/2 tsp salt
1/8 tsp pepper

Directions:
Directions:
Put cauliflower in saucepan and cover with about 2 inches of water. Bring water to boil, cover and simmer 10-12 minutes until tender. Heat oil over medium heat, stir in garlic until softened(about 2 minutes), remove from heat. Put about 1/2 the cauliflower in food processor, cover and blend on high. Add remaining cauliflower until creamy. Blend in garlic, cream cheese, parmesan cheese, salt and pepper
