1 medium head cauliflower or 1 pound frozen cauliflower
1 pkg (8 ounces) cream cheese softened
1/2 pound bulk sausage, cooked and crumbled
4 ounces smoked gruyere,swiss or any other smoked cheese, shredded or cut into thin slices
sal and pepper

Directions:
Directions:
Boil the cauliflower in water or chicken broth until tender. Drain... Mash with a potato masher. Preheat oven to 350º Add cream cheese and sausage to the mashed cauliflower and mix well. Spread half of this mixture in a 2 quart casserole dish and top with half the cheese. Add remaining cauliflower and top with remaining cheese. Bake until bubbly( about 30 minutes
