1 cup sugar
3 TBSP heaping corn starch
1/2 cup lemon juice
4 egg yolks
2 cups hot water
MERINGUE:
4 egg whites
4 TBSP sugar
1/3 tsp cream of tartar

Directions:
Directions:
Mix sugar and cornstarch. Add lemon juice, egg yolks and hot water. Bring to a boil until it thickens , stirring constantly. Pour into baked pie shell.
Meringue:
Beat egg whites and cream of tartar until frothy- gradually beat in sugar- continue beating until stiff and glossy. Spread over lemon layer- taking care to spread over the edge crust to seal and ensure meringue doesn't shrink. Bake at 400 degrees for 8-10 minutes until meringue browns.
