3 Tbls. extra virgin olive oil
3 garlic cloves, minced
1 (28 oz.) can crushed tomatoes
1 (14.5 oz.) can diced tomatoes
3 Tbls minced fresh basil
1/4 tsp sugar

Directions:
Directions:
Cook oil and garlic over medium heat, stirring often untl fragrant but not browned (about 2 minutes). Stir in the crushed and diced tomatoes with their juice. Bring to a simmer and cook until slightly thickened, 15 to 20 minutes.
Stir in basil and sugar. Season with salt to taste. When tossing the sauce with pasta, add some of the pasta cooking water as needed to loosen the consistency of the sauce.

Original recipe makes 4 cups of sauce, enough for one pound of pasta.
This recipe can be easily doubled, but you will need to simmer the sauce an additional 10 minutes.

VARIATIONS:
Spicy Sauce: add 1 tsp red pepper flakes with the garlic in step 1 and substitute 1/4 cup minced parsley for the basil in step 2.

Quick Tomato Sauce with Vodka and Cream: Add 1/2 tsp red pepper flakes with the garlic in step 1. Stir in 1/2 cup vodka after the sauce has simmered for 10 minutes. Stir in 1 cup heavy cream during the final 3 minutes of simmering, then season with salt and pepper to taste. Omit the basil and sugar.

Can use this sauce with Cheesy Baked Manicotti

Best brand of canned tomatoes to use: Muir Glen, organic tomatoes. I sometimes buy the one with the additional basil in the can, but fresh herbs makes it the very best.

This quick and easy recipe is similar to the delicious sauce that mymother Maria Ristev makes from scratch.

It is thinner than the store bought brands, but deliciously diffeernt.
