1 pound hamburger
1/2 chopped onion
Pretor spaghetti sauce
Kosher salt
2 eggs
1 TBSP water
dry bread crumbs
Mozerella cheese
parmesan cheese

Directions:
Directions:
Brown hamburger with onion, drain. Add spaghetti sauce to hamburger
Salt sliced eggplant on both sides with kosher salt. Put between paper towels and let sit for 1 hour
Rinse off slices well under cold water. Coat slices with 2 eggs and 1 TBSP water(mixed well), then coat with fine dry bread crumbs
Heat peanut oil and fry each side until golden brown. Drain on paper towels.
Layer Eggplant, then hamburger mixture then mozzarella cheese. Layer again with eggplant and hamburger mixture. Bake at 325 º for 30 minutes. Top with mozzarella and parmesan cheeses . Bake 10-15 more minutes until cheese is melted
