1 recipe pie dough or prepared frozen pie crust
1/2 pound bacon(can use more or less)
1 cup milk
1/2 cup heavy cream
3 eggs 1/2 tsp salt
Black pepper to taste ( about 1/2 tsp)
1/8 tsp ground nutmeg
1 cup grated cheddar cheese
1 heaping TBSP chopped chives

Bake pie crust until lightly browned. Remove from oven. Fry bacon , cool and crumble. Preheat oven to 350 º, whisk eggs in large bowl, add nutmeg. salt, pepper and chives. Whisk a little more. Add milk, cream and whisk vigorously until mixed very well--introduce a little air into the mix which keeps it light and fluffy. Arrange cheese and bacon on bottom of the pie crust. Whisk egg mixture hard for a few seconds, then pour gently over bacon/cheese. You want bacon and cheese to be suspended in mix so you may need to gently stir. Bake 30-40 minutes until it is done ( just a little wiggle) Can keep in fridge for several days and reheat in 200º oven
