2 - 1/2 cup seasoned croutons
1 pound pork sausage
4 eggs
1/4 tsp dry mustard
2- 1/4 cup milk
1 (10-1/2 ounces) can cream of mushroom soup
1 ( 10 ounce) frozen chopped spinach, thawed and squeezed dry or fresh raw spinach
1 (4 ounce) can of mushrooms (drained) if desired
1 cup shredded cheddar cheese
1 cup monterey jack cheese

Directions:
Directions:
Spread croutons in bottom of greased 9x13 inch pan. Fry sausage until browned, put on top of croutons. Wisk eggs and milk in a large bowl until blended, add soup and spinach. Pour over top of browned sausage. Cover and refrigerate over night. bake at about 350 º until it is set.
