1 1/3 C. Sugar
6 Tbsp. Cornstarch
Dash of Salt
1/14 C. Boiling Water
3 Eggs, separated and beat the egg yolk
1/3 C. Lemon Juice
2 tsp. Lemon Rind
2 Tbsp. Butter (or margarine)
7 oz. Marshmallow Creme
9" Baked Pie Shell

Directions:
Directions:
Combine the sugar, cornstarch and slat in a saucepan. Gradually add the water and bring to a boil, stirring constantly. Cook until thickened (about 1 minute). Stir a small amount of hot mixture into beaten egg yolks, return to the hot mixture. Cook over medium heat for 3 minutes, stirring constantly. Stir in lemon juice, butter and lemon rind. Pour into the cooled pastry shell.

Beat egg whites and a dash of salt until soft peaks form. Gradually add the marshmallow creme. Beat again until stiff peaks form. Spread over lemon filling, sealing to the edge of the crust.

Bake for 12-15 minutes or until lightly browned.

Cool before serving.
