1(4 lb) chicken
½ teaspoon salt
½ teaspoon black pepper
1 cup olive oil
2 fresh parsley sprigs
1 fresh rosemary sprig
1 fresh thyme sprig
1 fresh sage sprig
1 bay leaf
1 rib celery
40 cloves garlic, peeled
toasted baquette slices

Directions:
Preheat oven to 350 degrees

Rinse chicken and pat dry. Sprinkle inside
and out with salt and pepper. Tie legs
together with string and fold wings under
chicken.

Heat oil in 6 to 8 quart heavy ovenproof pot
over med high heat till hot, then brown chicken
entirely, about 10 minutes. Transfer to a plate.

Tie herbs and celery together with string and add
to pot with garlic cloves. Put chicken, breast side
up, on top of cloves and bake covered in middle of
oven, basting until cooked through , 40 to 50
minutes. Thermometer inserted into thigh should
read 170 degrees.

Transfer chicken to cutting board and let stand 10
minutes. Cut chicken and serve with reserved pan
juices. Remove garlic cloves and mash into a paste
to spread on toasts.
