2 pounds lean ground beef

1 (8 ounce) can sliced pineapple

8 slices bacon

plus Chipotle mayo to follow.

Directions:
Cook bacon to desired doneness, and caramelize the pineapple on both sides.
grill the burgers to our preferred temperature.

1/2 cup mayonnaise
1/4 cup sour cream
2 to 4 chipotle chiles from 1 can of chipotles in adobo, depending on your wanted heat level
2 tablespoon freshly squeezed lime juice

DIRECTIONS
Place mayonnaise, sour cream, lime juice, and chipotles in jar of a blender. Puree until smooth and chipotles are completely chopped. Pour into an airtight container, cover, and store in the refrigerator until ready to use.
