Date cake: 3 tsp granulated sugar; 3 tsp cornstarch; 1/4 tsp salt; 3/4 c. water; 1 tsp grated lemon peel; 1 Tbsp oleo; 1/4 c. lemon juice; confectioner's sugar.

Prepare cake as directed except bake in greased and floured jelly pan, 15X10X1 for 20-25 minutes. Cool.

IN saucepan, mix granulated sugar, cornstarch and salt. Gradually stir in water. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Remove from heat; add lemon peel and butter. Gradually stir in lemon juice and if desired few drops of yellow food coloring. cool Thoroughly. If filling is too soft, refrigerate until set. Split cake to make 3 layers. Fill layers with lemon filling; dust top with confectioner's sugar. If desired, garnish with chopped or pitted dates. chill
