1 pound butter
4 c. flour
1 c. water

1. Coarsely chop butter and combine with flour and water--flour will not be completely moistened.

***Must chill overnight before using

2. On floured surface. Knead dough 10 times. Pressing and pushing dough together to form a rough ball. Will still have some areas that look dry-some crumbs of butter will be visible.

3. Turn dough out onto well floured surface. Roll to form. 17X12 rectangle 1/4" thick. Fold 1/3 of dough over the center. 1/3 and fold remaining 1/3 over top (3 layers) cover dough and let rest 5 minutes in refrigerator.

Repeat step 3. Cover and let rest 10 minutes more in refrigerator. Repeat rolling and folding into 3 layers once more. Place dough in saran wrap. chill dough overnight in fridge.

Makes 2 batches of Krakeling
