Zucchini Cookies Recipe

3 c. flour, unsifted
1 tsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
3/4 c. shortening
1/2 c. white sugar
1 c. brown sugar
2 eggs
2 c. finely grated zucchini
3/4 c. raisins or dates ( I use dates)
1/2 c. chopped nuts

Directions:
Directions:
Sift together first 7 ingredients. Cream shortening and sugars. Beat in eggs and 2 tsp vanilla. Add dry ingredients with zucchini. Stir in raisins or dates and nuts.

Drop by tsp on greased cookie sheet. Bake at 375 until edges begin to brown about 8-10 minutes. Cool for 1 minute then remove from pan.

Frost with powdered sugar frosting. I used orange flavoring in frosting
