2 lbs Meatloaf Mix (combo of 1 lb ground beef, 1/2 lb each pork and veal)
1 c breadcrumbs
1 handful parmesan cheese
2 eggs
2-3 tbsp crushed fresh garlic
1 tbsp parsley flakes or fresh minced
salt and pepper to taste
2 tbsp. olive oil

Mix ingredients lightly in bowl. Do not smush. Heat oil in pan. Wet hands regularly while forming meatballs to increase their shiny coat. Grammy always liked that. Place balls in pan on medium heat. Turn regularly.

Aunt Boops made it a point to let me know Gram insisted on exactly 13 meatballs per pound. She would hold Boops to that every time. She also threw a few balls to cook in the sauce which some of us preferred. I can remember Gram standing at the stove and could not wait until she called me to be the "royal taster" to make sure meatballs were ready. I would always snitch a few more after that. Didn't realize till now that she must have known since she was so particular about exactly 13 balls per pound!
