12 large red peppers
1 tbsp salt
1 pint cider vinegar
3 cups sugar

paraffin wax
small sterilized canning jars

Directions:
Directions:
Remove seeds from the red peppers. Puree or grind in food processor. Put in large bowl-Add salt & let stand for 3 hours. Drain well in colander. Put in large pot and add the vinegar and sugar. Simmer slowly until like jam, about 1-1/2 to 2 hours. Pour into small sterilized jars-top with melted paraffin wax-making sure well sealed. Do not double recipe or cook to long.
Great over cream cheese, served with crackers
