Ingredients:  
4 large potatoes
1 yellow onion
1 egg, beaten
1 tsp salt
black pepper to taste
2 tbls flour
canola oil for frying

Directions:
Directions:
1. Finely grate potatoes w/ onion into a large bowl. Drain off and squeeze out extra liquid.
2. Mix in egg, salt and pepper. Add enough flour to make mixture thick (2-4 tbls all together).
3. Turn on oven to 200.
4. Heat 1/4 inch oil in bottom of heavy skillet over medium high heat.
5. Drop 2 or 3 1/4 cup mounds into hot oil and flatten to make 1/2 inch thick pancakes.
6.Fry, turning once, until golden brown.
7. Transfer to paper towel lined plates and keep warm in oven.
