1# pork tenderloin
1/2 cup chopped onion
2 tbls butter
1 cup soft bread crumbs (from italian bread lightly toasted)
1/4 cup minced fresh parsley
1/4 tsp rubbed sage
1//4 tsp dried rosemary, crushed
1/4 tsp salt, 1/8 tsp pepper
1 egg (lightly beaten)
1-2 bacon strips

Split tenderloin lengthwise 3/4 of the way through so it lies flat. Flatten to 1/4" thickness. Set Aside
In small skillet over medium heat saute onion in butter until tender. Add bread crumbs, saute until crumbs turn golden brown. Remove from heat. Stir in seasonings and enough egg to moisten.
Spread stuffing on 1 long side to within 1/4" of edges. Close, place bacon on top and tie closed. Place on rack in shallow pan uncovered 350 for 40 - 60 minutes.
