2 pounds carrots, scrubbed and halved or quartered ( as you like )
1/3 cup walnuts, roughly chopped
1/4 cup high quality maple syrup
2 tablespoons unsalted butter, melted
salt, to taste ( Optional sea salt for garnish )
freshly ground pepper to taste

Directions:

1. Preheat oven to 400º F.
2. Pat carrots dry with paper towels and place on a baking sheet.
3. In a small bowl, whisk together maple syrup and melted butter.
4. Drizzle maple syrup mixture over the carrots, reserving a small amount for later.
5. Place in Oven and bake for 20 min.
6. Add chopped walnuts and toss again to make sure they're incorporated and everything
bakes evenly. Glaze with remaining maple syrup
7. Bake for another 10 - 15 min, or until carrots are glossy and tender
8. Remove from oven and garnish with sea salt
9. Serve warm
