1 lb. baby potatoes, washed and rinsed
2 tbsp. salted butter, melted
2 tbsp. olive oil
4 cloves garlic, finely minced
pinch of salt
pinch of cayenne pepper
3 dashed black ground pepper
chopped parsley, for garnish

Directions:
Directions:
1. Preheat oven to 400.
2. Place each potato on a wooden spoon and cut horizontal slits on the potatoes.
3. In a small bowl, combine butter, olive oil, salt, cayenne, garlic, and black pepper together. Stir to combine well.
4. Toss the potatoes with the garlic mixture, coating well. Make sure the garlic mixture gets inside the slits of the potatoes. Transfer potatoes to roasting pan.
5. Roast potatoes for 20 minutes, then turn them over and baste with garlic oil. Roast for another 20 minutes.
6. Remove from heat and serve immediately, garnished with chopped parsley.
