1 4# roasting chicken
2 cloves garlic crushed
2 fresh rosemary sprigs
1 lemon quartered
2 t chopped fresh rosemary
3/4 t salt
1 t olive oil
6 shallots peeled and quartered
3 firm Asian pears peeled cored and cut in 8 wedges
1/2 cup chicken broth
1/4 cup walnut halves
1/2 cup water
3 T champagne vinegar
2 T honey
1/4 t salt
1 T lemon juice
1 clove garlic minced
2 t walnut oil

Directions:
Directions:
Heat oven to 425º. Remove and discard giblets and neck from chicken. Place 2 crushed garlic cloves, rosemary sprigs and lemon in body cavity. Loosen skin from breast and drumsticks by inserting fingers and gently pushing between skin and meat. Mix chopped rosemary and salt and oil together. Rub under skin. Tuck wings under chicken. Tie legs together with twine. Place chicken breast side up in roasting pan. Bake at 425 for 25 minutes. Arrange shallots and pears around chicken. Add chicken broth to pan to baste chicken. Bake 30 minutes. Stir shallots and pears. Add walnuts to pan. Bake 10 minutes or until thermometer reaches 165 º. Let stand 20 minutes. Separate drippings and fat. Discard fat.Add 1/2 cup water. Return to pan. Cook over medium heat stirring pan to loosen brown bits. Add 1/4 t salt, vinegar, honey, lemon juice and 1 minced garlic clove. Cook until reduced by 1/2. About 4 minutes. Remove from heat.. Stir in walnut oil. Serve with chicken.
