Chunks of Venison

1 cup Tender Quick
3 cups warm water

Onion and Garlic powder

Directions:
Directions:
Mix Tender Quick and water.
Inject into meat until swells

Mix enough brine to cover meat and let soak 48 hours. This is where you can add onion and garlic powder.

DO NOT add anymore salt as this makes it salty enough.

Smoke for 2 hours and the bake at 250 until meat is done. About 160 degrees
