1 pound salmon filet
1 tablespoon olive oil
1/4 cup lime juice
1/4 cup lemon juice
3 cloves garlic, minced
2 tablespoons fresh parsley
1/4 teaspoon hot pepper sauce
1/2 cup scallions, minced
2 large tomatoes, thinly sliced

1. In a large, nonstick frying pan over medium high heat, sauté the salmon in the oil for 4-5 minutes on each side. Handle the fish gently to keep keep the pieces whole.
2. Add the lime juice, lemon juice, garlic, parsley, and hot pepper sauce to the pan. Cook for about 3 minutes.
3. Transfer the salmon to a larger platter. Pour the pan juices over the fish.
4. Cover and refrigerate until chilled.
5. Serve sprinkled with the scallions and topped with the tomatoes.
